With the abundance of soft fruit in the summer months here is a really easy recipe, and it is even low in fat :)<span><a name='more'></a></span>See what soft fruit is at Country Matters this week.<br />

You need a quantity of fruit, a nice selection is good - but it pretty much works with any combination of:<br />
Strawberries<br />
Blackcurrants<br />
Redcurrants<br />
Blackberries<br />
Loganberries<br />
Blueberries<br />
<br />
Choose something with a bit of punch like blackcurrants or blackberries, but not too many that it overpowers.<br />
<br />Put all the fruit into a saucepan with some sugar, and a tiny drop of water, the quantity of sugar depends how sweet you like things. Take nearly all of the fruit out of the saucepan leaving a small amount in the saucepan, mash it up with the juices to make more sauce.<br />
<br />
Roughly line a pudding bowl with cling film leaving the edges out, this will ensure it will come out easy.<br />
<br />
Now line the basin with a single layer of sliced white bread, you could experiment with different bread, just not too thick.<div><br /><div>Leaving the slices as complete as possible, fill in all the gaps. Dunk the outside of the slices in the sauce and put back into the basin. Then pile the fruit into the basin so it is full. </div><div><br /></div><div>Make a sliced bread lid - again dunking the outside in the sauce. Without dunking the outside of the slices, it sometimes doesn't seep all the way through.</div><div><br /></div><div>Find a saucer that fits on top of the basin so that it would squash the contents down, and put a tin of something on top to weigh it down.<br />
<br />
Leave overnight in the fridge.<br />

There are loads of recipes on the internet, have a search around to see how others do it, t isn't a recipe that needs an exact science - just go with what you fancy, you just don't want too much juice, if you have too much use it to add to serve.<br />

Lemons and eggs are normally available at Country Matter Hexton, you only need butter and sugar.</div><div style="text-align: center;"><br /></div><div style="text-align: center;">I just followed the simple recipe on the <a href="https://www.bbcgoodfood.com/recipes/lemon-curd" target="_blank">BBC web site</a>, there are recipes with extra egg yolks, but this one worked for me.</div><div style="text-align: center;"><br /></div><div style="text-align: center;">Basically the recipe is 1 lemon, 1 egg, 50gms sugar, 25gms butter, and make quantity bigger depending how much you want. It doesn't keep that long - recommended only 2 weeks - so you don't want to make too much unless you share it. I gave one of my jars away.</div><div style="text-align: center;"><br /></div><div style="text-align: center;">I made 2 small jars, I put my jars in the dishwasher, and then whilst I was making the curd, I put them and the lids in the oven, so that they were sterilised. For your own purposes/personal a reused jam jar lid is fine. If you were going into mass production I recommend you buy new lids :)</div><div style="text-align: center;"><br /></div><div style="text-align: center;">Here how I made mine:</div><div style="text-align: center;"><br /></div><div style="text-align: center;">2 lemons, zested and then squeezed,</div><div style="text-align: center;">put in large bowl (that will fit on the top of a saucepan) add 50gms of butter and 100gms of sugar (it suggested caster but I didn't have any).</div><div style="text-align: center;"><br /></div><div style="text-align: center;">Get a saucepan on hob with water in it, and bring it to a simmer.</div><div style="text-align: center;"><br /></div><div style="text-align: center;">I started heating mine in the microwave, stopping and stirring every now and again, until butter and sugar has melted....but you can do all of this over the saucepan.</div><div style="text-align: center;"><br /></div><div style="text-align: center;">Place your bowl on the saucepan, the water should not touch the bowl it should be steam that is heating it.</div><div style="text-align: center;"><br /></div><div style="text-align: center;">Now beat the eggs together, and add to your mix, keep whisking it for about 5 - 10 minutes, you will notice it starting to thicken. This week in Country Matters Hexton we have onions for pickling form not far away in Soham, Cambridgeshire.<span><br /><a name='more'></a><br /></span></div><div style="text-align: center;"><span>There are very few ingredients needed for making pickled onions - but you can enhance the flavours by adding some additional ingredients to the vinegar. My nanna used to make them every year for Christmas and put chillis in them, and leave them in. I remember when you visited around Easter time and she still had an unopened jar they would blow your head off - well I was only young.</span></div><div style="text-align: center;"><span><br /></span></div><div style="text-align: center;">You can take out the spices or leave in, the main thing to do is leave them at least 1 month for the onions to take on the pickle taste.</div><div style="text-align: center;"><br /></div><div style="text-align: center;">There is a nice simple recipe on the <a href="https://www.bbcgoodfood.com/recipes/pickled-onions" target="_blank">BBC Good food page here</a></div><div style="text-align: center;"><br /></div><p></p><div style="text-align: center;">500g small shallot</div><div style="text-align: center;"><div>50g salt</div><div>500ml malt vinegar</div><div>200g clear honey</div><div><div>Method</div><div><br /></div><div>Place the onions in a large heatproof bowl and pour over boiling water to cover. Leave to cool. Once cool, trim roots and tops and peel. Sprinkle the salt over the peeled onions, stir and leave overnight.</div><div><br /></div><div>Next day rinse the onions well and dry with kitchen towel. Place the vinegar and honey into a large pan and gently heat just to dissolve the honey into the vinegar, but do not boil.</div><div><br /></div><div>Pack the onions into clean, sterilized jars. Pour over the hot vinegar mixture to fill the jars, and check there are no air pockets. Seal the jars and leave to cool. The onions will be ready to eat after about 1 month or better if kept for 2. Once opened store in the fridge.</div></div><div><br /></div><div>you can add to the vinegar any of the following</div><div>yellow mustard seeds 1 tsp</div><div><div>mixed peppercorns 1 tsp</div><div>dried chilli flakes 1 tsp</div></div><div><br /></div><div>You can choose cider vinegar - especially if you want a gluten free jar.</div><div><br /></div><div>To sterilise jars put in a dishwasher if you have one, and then put in the oven on a low heat, whilst preparing the vinegar. This carrot cake recipe is super light and is lower in fat, I can't pretend it is calorie free....<span></span></p><a name='more'></a><p></p><p><b>Carrot Cake</b></p><p></p><ul style="text-align: left;"><li>6oz (175 g) dark brown soft sugar, sifted (or a mix of honey and sugar)</li><li>2 large eggs</li><li>4fl oz (120 ml) sunflower oil</li><li>7oz (200 g) self-raising flour (two suggested wholemeal but I didn't have any)</li><li>1½ level teasps bicarbonate of soda;</li><li>2 0r 3 rounded teasps mixed spice</li><li>grated zest 1 orange</li><li>7oz (200 g) carrots, peeled and coarsely grated</li><li>6oz (175 g) sultanas</li></ul><p></p><p>Gas mark 3, 325°F (170°C). oblong roasting tin – 4cm deep (swiss roll tin size but deeper),</p><p>Whisk sugar, eggs and oil together. Then sift together the flour, bicarb, mixed spice. Stir all together, fold in the orange zest, carrots and sultanas.
